As the weather improves and the long evenings call for a refreshing cocktail, why not give our Non-Gin fizz a go?

This recipe has the perfect balance of sweet and sour combined with the aromatics you find with Gin.

• 1/2 a lemon
• 1/8 pineapple
• 1 handful of arugula
• 2 pears
• Fizzy water

Juice the pineapple and lemon normally in your juicer. Sandwich the rocket between the two pears and then juice (this helps to stop the rocket just hitting the blade and going straight into the pulp bin).

Place into a small jug and top up with your fizzy water of preference. Now relax and enjoy this virtuous alternative to a firm cocktail favorite.
